Injecting French country style cuisine with a modern fine-dining touch

The farmhouse inn and restaurant in Beaune is centered on creating food experiences that reflect Chef Fred Ménager’s sensibilities, influences and personal touch. Before opening La Ruchotte®, Ménager honed his skills working as sous-chef in the esteemed kitchens of Alain Chapel (three Michelin-starred chef) and Pierre Gagnaire (three Michelin-starred chef). Chef Frédéric Ménager is now reinventing the traditional home cooking of the French middle class with a touch of Haute Cuisine, his own modern interpretation of French fare, which he has dubbed “Haute Cuisine Bourgeoise.” Newly added to his roster of special events are his gastronomic experiences – multi-course once-in-a-lifetime feasts where you will enjoy all manners of decadence. The menu changes daily in accordance with the bounty harvested from the farm surrounding the restaurant, which is supplemented by products from Chef Ménager’s trusted local purveyors. Among his creations: Melon Soup, marinated raw zucchini, candied tomatoes and olive oil. Pâté en croûte made with pigs from his farm, pistachios, candied gizzards and fermented vegetables. Cèpe mushrooms forged in the surrounding woods, bacon made from his pigs and flat parsley. Quenelle made with poultry from his farm in a consommé and Burgundy truffles. Pig breast marinated and cooked for 72 hours. Cream tarte with blueberries from Bérangère. Gluten-free vegan iced nougat with candied fruits from Maison Florian, nougatine of pistachios, hazelnuts and almonds.

The mushrooms are foraged by Fred’s mother, his cousin provides the goat cheese and Fred hikes the woods in search of wild asparagus and bear’s garlic, along with other treasures that nature offers him.

A knife designed and studied based on more than 20 years of cooking expertise, exceptional grip and flawless sharpness. Frédéric Ménager has put all his know-how into the development of this kitchen “instrument” like no other. Many steps were necessary to achieve a result that fully met Frédéric Ménager’s expectations!
